Yogurt Cheese & Breakfast Berry Strata



How to make Yogurt Cheese

Step 1 - Choose a non-fat plain yogurt that does NOT contain gelatin in it. If it has gelatin in it, then it will not have the right consistency. Here is what I used.


Step 2 - I used a tea towel draped in a mess colander. You can use a sieve & cheese cloth. This was more budget friendly.


Step 3 - Place inside a bowl and let sit in refrigerator overnight!


Step 4 - Remove from fridge and be amazed at how much liquid was drained from the yogurt. Voila, it is ready to use! So simple!


Here is the yogurt cheese mixed with a 100% all natural no sugar added jam. This is so yummy!


Breakfast Berry Strata from the Eat Clean Diet Cookbook was a hit in our house! Here is the egg mixture to pour on the top once you have..


Cut the crust off of your sour dough bread...


Sprayed pan with non-stick spray and place half of bread on bottom of the pan...


Dolloped yogurt cheese/jam mixture on top of bread with out spreading it out...


Top with fresh berries & slivered almonds...


Repeat layers...



Pour Egg mixture on top, let soak covered with tin foil overnight...



Bake at 350 degrees for 45 minutes uncovered...


If you don't have time or forget to soak overnight like I did, you can always just spread some yogurt cheese/jam mixture on your toast and top with fresh berries! Hope you enjoy!

Hmmmm....I don't know about this one but we will try it. I will definately not tell the rest of the family what it is until they try it.
