Lime Cilantro Chicken Quesadillas

Here is what you need:

1 1/2 Cups of shredded mexican style cheese
1/2 red onion, chopped
2 garlic cloves, minced
2 limes
Fresh cilantro
1 Tbsp Oregano

Mix all these ingredients together into a bowl. Mixture will be paste like once you add the chicken in later.



Chicken Marinade

1 Tsp. chili powder
1 Tsp. paprika
1 Tsp. Cumin
Fresh cracked pepper
1 Tsp Sea Salt
1-2 juices of lime

Let marinate for 30 minutes in refrigerator, then place directly on hot grill.




Shred chicken once cooled and toss into bowl with other ingredients. (We grilled extra chicken so we can cook less and enjoy the yummy chicken on a salad for lunch or throw in a wrap!)



Place 3 whole wheat tortillas on a cookie sheet. Spread ingredients evenly over tortillas. Place another tortilla on top and place in preheated oven at 350 for 8 minutes!



We served our quesadillas with some grilled squash and fresh fruit salad. Here is proof that our daughter does eat at some point!
